Spherification of white asparagus served with balsamic pearls. Tuna carpaccio filled with asparagus and mint guacamole. Tartelette Flemish style.

Foie Gras on White Asparagus, fig bread, Pata Negra Spanish ham and black berry sauce.
Gavi di Gavi La Scocca 2016 DOCG
Risotto with white asparagus, Parma ham powder and winter black truffle.
Vermentino Villa Solais Santadi 2015 DOC
Dutch veal loin walnut crusted served with grilled asparagus and hollandaise sauce.
Nambrot Teuta di Ghizzano Super Tuscan 2013 IGT
Apple Pie with warm vanilla sauce, blueberries and sour cream.
