Anantara Hua Hin Resort is pleased to announce Chef ‘Tam’ Chudaree Debhakam will join with our Rim Nam restaurant team to host an exclusive dining experience over two evening from 18 – 19 April 2019.
One of Thailand’s most exciting young culinary talents, Chef ‘Tam’ was the winner of ‘Top Chef Thailand Season 1’. ‘Top Chef’ is a U.S. reality television series featuring chefs competing against each other in various culinary challenges and was brought to Thailand by channel One31. At just 24 years of age Chef ‘Tam’ was the youngest competitor during the first (2017) season of Top Chef Thailand. Since winning she has travelled and cooked in 6 different countries showcasing modern Thai cuisine by using local, seasonal, and organic ingredients. Rim Nam is Anantara Hua Hin’s speciality Thai restaurant and is currently rated #1 of 680 restaurants in Hua Hin. The pavilion style restaurant overlooks a palm-fringed pool and lush tropical gardens offering the finest local ingredients combined in a variety of unique creations of regional Thai dishes.
Chef ‘Tam’ will join the Rim Nam team to present two evenings of innovative dining.
Thursday 18 April – Taking our Lanna inspired ‘Khantoke night’ to another level, guests will be presented with a sharing Khantoke tray of 3 specially developed appetisers. Followed by 3 main course dishes, once again in the sharing style, as is Thai tradition. All designed by Chef Tam for your culinary pleasure.
Friday 19 April – Working with the Rim Nam team, Chef Tam will present a 4-course menu showcasing her sustainable and innovative farm-to-table philosophy. Each course will be served with a suitable wine pairing.
About Chef Tam:
A graduate in Nutrition and Food Science from the University of Nottingham in England. Returning to Thailand ‘Tam’ decided to leave the laboratory and pursue a career in the professional kitchen. After graduating from The International Culinary Center in New York City Tam worked for Dan Barber at Blue Hill at Stone Barns, New York for two years. Blue Hills is currently number 12 on the Worlds 50 best restaurant list 2018. The restaurant is renowned for its sustainable food concept. Being located on farmland, the menu showcases fresh organic produce. With her background in farm driven cuisine combined with her knowledge in nutrition, Chef Tam’s cooking focuses on organic, local Thai produce, with traditional Thai flavours and modern flare.
Anantara Hua Hin’s commitment to sustainable cuisine:
Anantara Hua Hin management team sees a lot of synergy with Chef Tam’s farm to table philosophy. Led by Executive Chef Rainer Mueller changes to purchasing policies at the resort over the last 12+ months has meant a significant percentage of fresh produce now being sourced from within Thailand. Additionally, the kitchen has partnered with new suppliers who produce seasonal, sustainable, and where ever possible, organic food for use across the resort’s kitchen. This includes local sustainable seafood.
Taking this initiative one step further, in April 2017 the resort created its own on-site hydroponic farm. The farm now produces at least 6 varieties of lettuce, fresh herbs, spices and other suitable produce. Farm production is now sufficient to cover the needs of the resort during full occupancy in high season. In November 2018 a mushroom farm was also added which now produces 5-8 kg of produce a day. Tropical Fruit trees have now been added on to the gardens mix. These initiatives have seen a significant reduction in ‘food miles’ and therefore minimising the resort’s carbon footprint from overall food transportation and ultimately, assisting with the resort’s overall sustainability initiatives.
